I have worked at McDonalds when I was younger and my checks were not paid by McD's but the franchisee, I understand how they run. Not many big time compianies own their own restraurant and if they do it is in the big places like Chicago etc...
Correct and then it's also regional__McDonald's, early on had company stores operating in the more populated areas and onesy twosy franchisee's out in the sticks. That changed over time and with the commissary set up all the locations use these days it's hard to tell the franchises from the company stores thus the current court battles regarding employee poaching.
As for KFC, the bulk of it's company stores, while having some dine in seating, were more set up for take out and that concept was perfect for the time. So perfect that there were actually independents selling dine in KFC right around the corner from company owned take out stores and both doing well__people liked that chicken__a lot!
