Here is one that I have made so many times that I don't even have to look at the cookbook.
Overnight Chicken Casserole
3-4 chicken breasts, cooked and cubed
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of chicken broth or broth from the cooked chicken.
1-7 oz. Box of uncooked elbow macaroni
1 to 2 green bell peppers
1 jar of pimentos.
1 medium onion chopped
I bag of peas
1 to 1.5 bags of cubed cheddar cheese.
Place all of above ingredients in a large greased casserole dish.
Refrigerate overnight
When ready to cook.
Preheat oven to 375.
Crumble Ritz crackers and pat with butter.
Cook for 30 to 35 minutes.
The beauty of this dish is you can add a variety of vegetables from asparagus to zucchini. But it is a great dish. And kids love it.
