Post recipes or shortcuts. I will start
Meatball sub

Can of biscuits
Marinara sauce
24 meatballs
Italian blended shredded cheese.
Spray a 9 by 13 pan with a non stick spray.
Preheat oven 350
Tear the biscuits into pieces and lay in the pan.
Pour marinara sauce on top.
Place meatballs on top.
Add cheese.
Cook 30-35 minutes. Serve with a salad or alone.

Unfortunately, I've lost most of my recipes that I did contribute to (which was mainly on the Manchester, Kentucky Forum) when the Topix forum closed so abruptly.
I do have a memory stick that I may still be able to recover some of my most precious gems passed down through generations that some posters may be interested in.
At least that is what I am hoping for.
In any event, I love your thread..

Carrots w/Honey Ginger Sauce

1Pk.Baby Carrots
2Tbs. Honey
2Tbs.Orange Juice
1Tbs.Soy Sauce
1/2 tsp.Ginger Ground
Cook Carrots, mix the rest of the ingredients well then pour over carrots..

Here is one that I have made so many times that I don't even have to look at the cookbook.
Overnight Chicken Casserole
3-4 chicken breasts, cooked and cubed
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of chicken broth or broth from the cooked chicken.
1-7 oz. Box of uncooked elbow macaroni
1 to 2 green bell peppers
1 jar of pimentos.
1 medium onion chopped
I bag of peas
1 to 1.5 bags of cubed cheddar cheese.
Place all of above ingredients in a large greased casserole dish.
Refrigerate overnight
When ready to cook.
Preheat oven to 375.
Crumble Ritz crackers and pat with butter.
Cook for 30 to 35 minutes.
The beauty of this dish is you can add a variety of vegetables from asparagus to zucchini. But it is a great dish. And kids love it.

Bife à Cavalo (Horseback-Riding Steak)
A traditional dish in both Brazil and Portugal, consisting of a grilled or sometimes deep-fried steak, with fried eggs on top.
 Prep Time 5 minutes
 Cook Time 10 minutes
 Total Time 15 minutes
 Servings 2
Ingredients
2 rib eye steaks 3/4-inch thick, 15-ounce
1 teaspoon salt divided
1/2 teaspoon freshly ground black pepper divided
1 tablespoon Tablespoon unsalted butter
1 tablespoon olive oil
2 fried eggs also known as sunny-side up eggs
1/4 cup small diced yellow onion
2 tablespoons chopped parsley or cilantro
Instructions
Remove steaks from the refrigerator and let sit at room temperature for 30 minutes minutes prior to cooking. Season each steak on both sides with a mixture of 1/2 teaspoon salt and 1/4 teaspoon pepper.
Heat a large, non-stick frying pan over high heat, melt the butter and stir in the oil. Cook the steaks for about 3-4 minutes per side (medium-rare to medium) or 5-6 minutes per side (medium-well to well done) and transfer to a plate. Meanwhile, cook the fried eggs in another frying pan.
Once steaks have been transferred to a plate, cook onions over medium heat for about 1-2 minutes in the same frying pan that the steaks were cooked in, utilizing the pan drippings, and stirring occasionally. Remove onions from the pan and place on top of the steaks. Top each steak with one fried egg and sprinkle 1 tablespoon of chopped parsley or cilantro on top. Serve immediately accompanied by fries or rice, beans, and a fresh salad. Enjoy!

That sounds delicious, Pete. A lot of my recipes I get off facebook or friends send them to me.

Skillet Apple Pie Biscuits

8 frozen buttermilk biscuits
1-21 oz. Can apple pie filling.
1 stick butter
1/2 cup light brown sugar.
1TBSP. ground cinnamon
1tsp. Vanilla extract
1/8 tsp. Ground nutmeg
Preheat oven 375. Melt butter and brush on all sides of 10 inch cast iron skillet. Set rest of butter aside
Mix brown sugar, cinnamon,  and nutmeg until well blended.
Dip each biscuit into melted butter.
Sprinkle all sides with cinnamon sugar mix. Arrange side by side in skillet.
Pour apple pie filling into a bowl and cut. Pour in 1 tsp. Vanilla extract and mix. Pour over biscuits. Pour remaining butter over and sprinkle with remaining cinnamon sugar mixture.
Bake 30 to 35 minutes.

Glaze:
1/2 cup powdered sugar
2 to 3 Tbsp. of cream or half and half
Or you can do 1 to 2 tsp. Milk.
Mix together.
Drizzle over warm biscuits.
Serve warm.

MeatLoaf

1 & 1/2 lbs. ground beef
2 eggs
3/4 cup milk
1 onion - chopped
1 cup Oatmeal Oats
1 tsp. sage
1 tbsp. thyme
1/4 tsp. ground black pepper
1/4 tsp. salt
3 tbsp. minced fresh parsley

Preheat oven to 350.
Mix eggs and milk.  Add onion, oats, seasonings, and parsley.
Add beef and mix well.

Shape into a loaf & place in 13x9 pan.
Bake for 50 min.
Remove from oven and drain grease.
Glaze loaf and back for another 10 -15 min.

Glaze:
3/4 cup ketchup
4 tbsp. brown sugar
1/4 tsp. dry mustard (or 1 tbsp. French's yellow mustard)

Here's  a trick I learned.
Want to make a cake taste like homemade.
Substitute milk for water and the milk makes it tase like it is made from scratch and makes it moister.

Broccoli Cauliflower Salad
1-2 heads of broccoli
1-2 heads of cauliflower
3 to 4 green scallions
3 yellow squash cut up
2 to 3 TBSP. of mayonnaise
1 to 2 Tbsp. Of sugar, I usually do about 1
1 to 3 TBsp. Of red balsamic vinegar
Bacon bits
Add all in a big bowl and mix together.

Veal or Beef Rouladen

8 pieces of veal or beef scaloppini
8 tsp. Dijon mustard
2 med. dill pickles (each quartered lengthwise)
2 strips bacon (each cut, widthwise, into 4 equal pieces)
1 small onion, diced
2 Tbsp. vegetable oil
2 cups beef stock mixed with 3 Tbsp. flour
1/3 cup red wine
1/2 tsp. dried thyme
Chopped parsley (garnish)

Oven 350.
Place a piece of veal on board and cover with plastic wrap. Flatten with meat mallet until 4" wide. Set aside.
Repeat with remaining veal.
For each piece:
1 tsp. mustard, 1 pickle slice, 1 bacon, 1 tsp. onion.
Roll & secure with toothpick and season with salt & pepper.
Place oil in skillet and brown on both sides.
Place in casserole dish (9x13) or roaster.
Drain oil from skillet and add stock/flour mixture, wine, and thyme. Bring to a simmer and pour over rouladen.
Cover & bake for 60-70 min (or until fork tender)
Garnish with parsley (optional)

His mother insisted I learned to cook some traditional foods of Germany.
That relationship didn't last long.. ;D

I have an authentic German cheesecake recipe. I took German in middle school, it was a hard language to learn but learned 2 recipes from it. A plum pudding and the cheesecake. The cheesecake had a zwieback crust which was teething biscuits that babies used.

Oh, I'm sorry to hear that - about your Mom.
Your online recipe choices are appealing.
I spent as much time with my Grandma (summer break) to learn as much as I could, when I could.
She was the best cook in the family and a wealth of information.
A seamstress by trade, tho.

My Mom's specialties were more along the lines of baking of which I've tried to carry on for my grandbabies, and much to their delight.
I'm happy you are posting here, and look forward to your recipes.

There were 3 things that my grandmother made very well that I wish I had recipes for, her strawberry cake, homemade grape juice and her coconut cream pie. I did get her Christmas float recipe. My grandfather was a better cook than her.

Kasekuchen(German Cheesecake)
2 1/2 cups Zwieback toast crumbs
1 1/2 cups sugar
1 tsp.cinnamon
1/2 cup melted butter
4 eggs
1/8 tsp. salt
1 1/2 Tbsp. Lemon juice
1/2 lemon rind grated
1 cup light cream
1-24 oz.cottage cheese
1/4 cups all purpose flour
1/4 cups chopped nuts
Preheat oven 350.
Generously butter a springform pan. Mix zwieback crumbs aith sugar, cinnamon  and melted butter. Spread about 1/2  on bottom and sides of pan to form crust.
Beat eggs until light, add sugar, salt, lemon juice and rind. Stir in cream and cottage cheese and flour. Beat in a large mixing bowl or use a blender to mix until smooth.
Pour into crust and cover with 1/2 of reserved crumbs.
Bake at 350 for 1 hour or until center is set. Turn off oven when hour is up and open oven doors and let stay in oven an hour longer.
Garnish with whip cream and cherries and nuts.

This is an experimental recipe. So it may be a flop.
3 to 4 chicken breasts,  salt and pepper them
1 can of cream of chicken soup
1 can of cream of mushroom soup
1 can of mushrooms
Carrots, I don't  measure
Potatoes, I didn't measure that either
1 onion sliced
Place all in crockpot and cook on high for 6 hours or low for 9.
I will let ya'll know it turns out, if it doesn't work. Domino's is on speed dial for supper tonight.

My wife... the pretty little Mrs. Cowface turned Vegitarian some years ago. She will eat fish & seafood. I am a big meat eater. We visit buffets often... she has wide selections as do I.

Kids like hotdogs so here goes.. 

If you like cooking on the grill but don't have time, here's an easy one.
The hotdogs taste like they've been grilled outside.

Turn your crock pot up on high.
Drain the juice from the hotdogs.
Put the hotdogs in the pot for one hour, no water added.  Put lid on.
10 minutes before the hour is up, wrap the buns in foil and place in the
crock pot.  Grilled hotdogs!

Sausages in Yorkshire Pudding

2 eggs, beaten
1 cup sifted flour
1 cup milk
1/2 tsp. salt
1 lb. pork sausages (Breakfast Style)

Partially cook sausages in pan which is to be used for baking.
Pour off part of the fat.

Beat the eggs well, and then add the flour & salt gradually - then add milk.
Mix this one hour before using.
Have a fair amount of fat in pan with the sausages and have it piping hot before pouring in the batter.

Bake at 450 oven for 1/2 hour or until puffed high & golden brown.

Mashed Potatoes
Green Beans & Carrots
Onion Gravy

I would but I was raised in a meat and potato home, so I don't really have any vegetarian recipes to share.

Grilled Squash Garlic Bread
In about 30 minutes

Ingredients
3 small zucchini
2 summer squash
3 tbsp. plus 1 tsp olive oil 
1/2 tsp. salt
1/2 tsp. pepper
1 bunch scallions
1 large ciabatta bread (10 in. by 7 in.)
1 large clove garlic
1/2 c. ricottta
1/2 lemon

Directions
*       Cut zucchini and summer squash lengthwise ¼ inches thick. Brush with 1 tablespoon olive oil, season with salt and pepper, and grill over medium-high until charred and just tender, 3 minutes per side. Toss scallions with 1 teaspoon olive oil and grill, turning occasionally, until just tender; transfer to a board and cut into pieces. 
*       Split ciabatta bread and grill until toasted, 1 minute per side, then rub each cut side with 1 large clove garlic and brush with 1 tablespoon olive oil. 
*       Spread ricotta on each half, then top with zucchini, squash, and scallions. Zest  lemon on top and drizzle with 1 tablespoon olive oil.

Chicken and rice
3 to 4 chicken breasts, uncooked
Rice according to how many people you are serving
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 small can of mushrooms
1 package of Lipton Onion Soup Mix
Mix the cream soups, mushrooms and lipton onion soup mix after rice is cooked with the rice.
Preheat oven to 325
In a large casserole dish that has been greased. Place rice concoction and then place uncooked chicken on top. Sprinkle another package of Lipton Onion Soup Mix on top and bake for 45 minutes to 1 hour until chicken is done. I have also added broccoli florets to rice mixture.

Not your Grandma's Brussel Sprouts

1 pound of Brussels sprouts,  quartered
1 tablespoon of olive oil

Lay Brussel sprouts on baking sheet or oven safe skillet.

Bake 10 minutes, shake the pan to turn and bake 8 to 10 more minutes, until crisp and golden.
Remove from oven and sprinkle with grated cheese.

I got this recipe from daughter's 4-H trip and she loved it.

I luv brussel sprouts to begin with, they are meaty, makes sense to eat them as your main coarse, will try your recipe soon. Will look forward to seeing the other 2 recipes.

Not your Grandma's Brussel Sprouts

This is very similar to those lovely brussels that they make at the Dutch restaurant that Cowface and I spoke about.  Yum!

Citrus Kale Salad
1 bunch of kale, washed and dried
1/4 cup orange juice
2 Tbsp. Olive oil
1/2 tsp. Sugar
1/2 tsp. Garlic powder
1/4 tsp. Salt
1/4 tsp. Pepper
1 Tbsp. Plain Greek yogurt
2 oranges, peeled.and seeded, cut into chunks
1 small red onion, sliced
1/2 cup sunflower or  pumpkin seeds

Tear leaves off kale stalk and chop. Set aside in large bowl.
Combine orange juice, olive oil, sugar , garlic powder, salt and pepper in a small jar. Shake until combined.
Add yogurt and shake again until creamy.
Pour over kale and toss.
Add orange pieces, onion and seeds.
Toss until combined.

BBQ Sweet Potato Nachos
2 sweet potatoes (long and evenly round), washed and sliced i to 1/4 rounds
2 Tbsp. Olive oils
1/2 Tsp. Salt
1/2 Tsp. Pepper
1/2 red onion, diced
1(15 oz.) Can black beans drained and rinsed
1/2 bell pepper, diced
1/2 avacado, put removed and diced, optional

Dressing:
1.5 teaspoons lemon juice
1/2 cup plain Greek yogurt
1.5 Tbsp. BBQ sauce
1/2 tsp. Chili powder
Preheat oven 425.
Spread sweet potatoe rounds on a large sheet pan and toss with olive oil, salt and pepper.
Roast potaotes for 10-15 minutes.
Combine other ingredients for dressing
Remove sweet potatoes from oven.
 Spronkle onion, black beans, bell pepper and avacado if using over sweet potatoes and let cool.
Drizzle with dressing or use dressing as dip.

Bacon cheese wrapped meatloaf
1 to 2 pounds of ground beef
1 chopped onion
1 to 2 green peppers chopped
3 eggs
1 cup bread crums
2 Tbsp. Of yellow mustard
1 to 2 packages of bacon
Any type of cheese. I like baby bel.
1 to 2 tomatoes chopped
Preheat oven to 350.
Layer bacon in a meatloaf pan. You will want to be able to cross the ground beef and wrap it so to speak.
Mix ground beef, eggs, onion, green pepper, bread crumbs and mustard.
Layer half of the ground beef in the pan. Layer cheese in this.
Add the other ground beef on top of cheese. Put tomatoes around it and fold with bacon.
Bake at 350 for 1.5 hours.

I'm jealous (in a way) we don't have a Mexican, Chinese or even a decent restaurant/diner for miles and miles (the nearest bigger city is 60 miles away ~ Pocatello) but I wouldn't trade livin in these rural mountains for anything.

Usually made with chipped beef but we like ours made with hamburger. (Hamburger Gravy)

Ingredients:
1 lb ground beef
2 cups milk
4 tbsp salted butter
4 tbsp all-purpose flour
1 teaspoon salt
1 teaspoon freshly ground pepper

Directions:

In a medium sauce pan over medium high heat, brown the ground beef.
Season with a little salt and pepper.
Drain excess grease and set aside.
Melt butter in the same sauce pan.
Add flour and stir until butter/flour mixture is bubbly.
Add milk, salt, and pepper.
Stir constantly until thick and bubbly.
Add meat and stir. 

Serve over toast or mashed taters.

It was and bake the meatloaf for close to 2 hours. Put a pan under the meatloaf pan to catch the drippings.

I'm thinking about summer is why this recipe comes to mind..

Bucket Pickles (keep in fridge) - 4 litre pail
(I use a glass dish)

4 lbs. cucumbers & about 3 med. onions
Slice cukes & onions into pail & add the following brine:

4 cups white sugar
2 cups vinegar
2 Tbsp. coarse salt
1 tsp. mustard seed
1 tsp. celery seed
1 tsp. turmeric

Bring above to boil for 2 minutes.
Cool brine to lukewarm.
Pour over cukes.

A recipe from my Grandmother.
Enjoy.

Southern Chess Bars
Southern Chess Bars

Ingredients:
1 box yellow cake Mix
3 eggs
8 oz. cream cheese
1 stick melted butter
1 lb. (1 box) Powdered Sugar

Directions:
Preheat oven to 300 degrees. Grease bottom of a 9 X 13 oven proof dish. With a hand mixer, mix together cake mix, melted butter and 1 egg. It will form a soft dough. Press into the bottom of the 9 X 13 pan. In a bowl, mix together sugar, 2 eggs and cream cheese until smooth. Pour mixture over the dough. Bake approximately one hour at 300 degrees until the top turns a light golden brown. Cool completely before cutting into squares.

Never Fail Pastry

165 g lard
500 ml flour (unsifted)
2 ml baking powder
1 ml salt
2 ml brown sugar
15 ml egg
5 ml vinegar
50 ml cold water

Cut lard into dry ingredients until mixture resembles a cornmeal texture.
Beat egg, add vinegar and cold water.
Add liquid to dry ingredients and stir to form a ball.
Chill, freeze or use immediately.

About 25 mins give or take... For a 9/13 sized pan...
Make sure to grease the pan first...

Simple but delicious
Any type of roast you like
Peppercinis
Italian seasoning mix
Onion soup mix
Put all in crockpot and set on low for 6 to 8 hours.
Makes it super delicious.

Old-Fashioned Potato Candy
Ingredients
1 small russet potato, peeled and sliced
6-8 cups powdered sugar
2/3 cup peanut butter
Instructions
Place potato in a small pan and cover with water. Cook until very tender. Drain and place in a large bowl.
Use a hand mixer to beat the potato until it is lump-free.
Add 4 cups of powdered sugar and beat until mixed well.
Continue to mix powdered sugar in 1 cup at a time until thick. (It should have the consistency of putty or cookie dough.
Place on a large piece of waxed paper that has been lightly coated with powdered sugar. Sprinkle some more powdered sugar on top.
Roll potato mixture out into a 1/4-inch thick rectangle.
Spread evenly with peanut butter.
Starting at a long side, roll up tightly like you would cinnamon rolls. Wrap in wax paper, cut in half and place both pieces in a large ziptop bag.
Refrigerate at least 30 minutes or until ready to serve.
Remove wax paper and cut into 3/4-inch slices.

AMAZING CHILI

1-1/2 lbs lean ground beef
2 medium onions, chopped
3 cloves garlic, finely chopped
2 stalks celery, chopped
1 large sweet green pepper, chopped
2 tablespoons chili powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon red pepper flakes, or to taste
1 can (28 oz) tomatoes, chopped, juice reserved
1 cup beef stock
1 can (19 oz) pinto or red kidney beans (I use kidney) drained and rinsed
1/4 cup chopped fresh parsley or coriander

In a Dutch oven, brown beef over medium-high heat, breaking up with back of a spoon, for about 7 minutes or until no longer pink.
Reduce heat to medium. Add onions, garlic, celery, green pepper, chili powder, oregano, cumin, salt and red pepper flakes; cook, stirring often, for 5 minutes or until vegetables are softened.
Stir in the tomatoes with juice and the stock. Bring to a boil; reduce heat, cover and simmer, stirring occasionally, for 1 hour.
Add beans and parsley; cover and simmer for 10 minutes more.

 

Tip:
The flavor of the chili hinges on the quality of chili powder used. Most powders are a blend of dried, ground mild chilies, as well as cumin, oregano, garlic and salt. Read the list of ingredients to be sure you're not buying one with starch and sugar fillers. Chili powder should not be confused with powdered or ground chilies of the cayenne pepper variety.

Burrito casserole
Preheat oven to 350
Brown a pound of ground beef with a small chopped onion, drain and cook until no longer pink. Add Taco seasoning and a can of refried beans.
In a separate bowl, mix 1/2 cup of sour cream and a can of cream of mushroom soup.
In a large baking dish, put half of the soup mixture in baking dish. Put flour tortillas on top of this and you may have to cut those to get them to fit. Put half of ground beef mixture on top. Sprinkle with a cup of cheese. Repeat layers ending with cheese. Bake 20 minutes.

Got this recipe from a friend.
2 cans of cinnamon rolls
1 can of pumpkin pie filling.
1 box of yellow cake mix
2 sticks of butter
Reserve the icing that come with rolls.
Put rolls in a 9×13 baking dish. Pour pumpkin pie filling on top and spread. Pour yellow cake mix on top. Cut butter into squares and put on top.
Bake 350 for 45-50 minutes.
Top with cream cheese or cinnamon roll frosting

You haven't tasted refreshing until you've tried this hot dog slushie. Well...maybe not. However, hilarious concoction is definitely something you might want to whip out on April Fool's Day. Kruschiki: the Ultimate Christmas Cookie

Ingredients
2 eggs at room temperature
4 egg yokes at room temperature
1/2 teaspoon sea salt
2 cups flour
1/2 cup powdered sugar
1/4 cup softened butter
1 shot brandy
lard or oil for frying
Instructions
Beat eggs, egg yolks, salt and butter until thick and lemon colored.
Slowly beat in the powdered sugar and brandy.
Slowly mix in flour.
Knead the dough for 3–5 minutes. The dough should be thick and will be a bit sticky.
To roll, you will be working with small balls of dough. Keep the rest of the dough in the bowl, covered with a clean, damp dish towel.
On a floured surface, use a rolling pin to roll the dough out very thin - 1/8th of an inch.
Take a sharp knife and cut the dough into strips about 2" wide. Then cut the other way on a diagonal to make pieces of dough that are about 2" x 4".
Cut a small slit (1" or less) in the center of each piece. To form the cookie, take one end and place it through the slit. Very gently pull the end of the dough through the slit to form a bow shaped cookie.
In a large pot or deep skillet heat about 3–4 inches of lard or oil until very hot.
Test the oil by putting in a small scrap of dough; it should sink to the bottom and then immediately float to the top. When this happens your oil is ready.
Fry the cookies in small batches. Fry for about 30 seconds and then use tongs to gently turn the cookies over. The cookies should be barely golden brown.
Drain on paper towels. Cool.
Dust liberally with powdered sugar.
Makes about 6 dozen cookies.

Cracker Barrel Air Fryer Chicken
3/4 cup Italian Dressing
2 TBSP. Honey
2 teaspoons lime juice
1/2 tsp. Salt
1/4 teaspoon pepper
1/2 tsp. Of garlic powder or minced clove garlic
5-6 chicken tenderloins

Place chicken in casserole dish, put all ingredients on topand let marinate for an hour or overnight. 
Set air fryer to 400, cook 10 minutes, flip at 5 minutes.

Blue Cheese, bacon balsamic onion hamburger burger

Ingredients


1/2 medium red onion
2 tbsp. balsamic vinegar
Kosher salt
pepper
1 1/2 lb. lean ground sirloin
4 oz. blue cheese
4 brioche hamburger buns
Lettuce
tomato
Cooked bacon slices


Directions
Step 1
In a small bowl, toss together the onion, vinegar, and 1/4 teaspoon each salt and pepper. Let sit, tossing occasionally, until ready to use.
Step 2
Heat grill to medium-high. Gently form the beef into 4 balls. (Don't overwork the meat — this can result in a tough, dry burger.) Flatten each ball into a 3/4-inch- thick patty. Using your thumb, make a shallow 1 1/2-inch-wide indent in the top of each patty. Season the patties with 1/2 teaspoon each salt and pepper.
Step 3
Place the patties on the grill, indent facing up, and cook until the burgers release easily from the grill, 3 to 4 minutes. Flip and cook to desired doneness, 3 to 4 minutes more for medium. During the last 2 minutes, top with the blue cheese and grill, covered, until gooey.
Step 4
If desired, grill the buns until lightly toasted. Serve the burgers on buns and top with the balsamic onions, lettuce, tomato, and bacon, if desired.
