Post recipes or shortcuts. I will start
Meatball sub

Can of biscuits
Marinara sauce
24 meatballs
Italian blended shredded cheese.
Spray a 9 by 13 pan with a non stick spray.
Preheat oven 350
Tear the biscuits into pieces and lay in the pan.
Pour marinara sauce on top.
Place meatballs on top.
Add cheese.
Cook 30-35 minutes. Serve with a salad or alone.

Unfortunately, I've lost most of my recipes that I did contribute to (which was mainly on the Manchester, Kentucky Forum) when the Topix forum closed so abruptly.
I do have a memory stick that I may still be able to recover some of my most precious gems passed down through generations that some posters may be interested in.
At least that is what I am hoping for.
In any event, I love your thread..

Carrots w/Honey Ginger Sauce

1Pk.Baby Carrots
2Tbs. Honey
2Tbs.Orange Juice
1Tbs.Soy Sauce
1/2 tsp.Ginger Ground
Cook Carrots, mix the rest of the ingredients well then pour over carrots..

Here is one that I have made so many times that I don't even have to look at the cookbook.
Overnight Chicken Casserole
3-4 chicken breasts, cooked and cubed
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 can of chicken broth or broth from the cooked chicken.
1-7 oz. Box of uncooked elbow macaroni
1 to 2 green bell peppers
1 jar of pimentos.
1 medium onion chopped
I bag of peas
1 to 1.5 bags of cubed cheddar cheese.
Place all of above ingredients in a large greased casserole dish.
Refrigerate overnight
When ready to cook.
Preheat oven to 375.
Crumble Ritz crackers and pat with butter.
Cook for 30 to 35 minutes.
The beauty of this dish is you can add a variety of vegetables from asparagus to zucchini. But it is a great dish. And kids love it.

Bife à Cavalo (Horseback-Riding Steak)
A traditional dish in both Brazil and Portugal, consisting of a grilled or sometimes deep-fried steak, with fried eggs on top.
 Prep Time 5 minutes
 Cook Time 10 minutes
 Total Time 15 minutes
 Servings 2
Ingredients
2 rib eye steaks 3/4-inch thick, 15-ounce
1 teaspoon salt divided
1/2 teaspoon freshly ground black pepper divided
1 tablespoon Tablespoon unsalted butter
1 tablespoon olive oil
2 fried eggs also known as sunny-side up eggs
1/4 cup small diced yellow onion
2 tablespoons chopped parsley or cilantro
Instructions
Remove steaks from the refrigerator and let sit at room temperature for 30 minutes minutes prior to cooking. Season each steak on both sides with a mixture of 1/2 teaspoon salt and 1/4 teaspoon pepper.
Heat a large, non-stick frying pan over high heat, melt the butter and stir in the oil. Cook the steaks for about 3-4 minutes per side (medium-rare to medium) or 5-6 minutes per side (medium-well to well done) and transfer to a plate. Meanwhile, cook the fried eggs in another frying pan.
Once steaks have been transferred to a plate, cook onions over medium heat for about 1-2 minutes in the same frying pan that the steaks were cooked in, utilizing the pan drippings, and stirring occasionally. Remove onions from the pan and place on top of the steaks. Top each steak with one fried egg and sprinkle 1 tablespoon of chopped parsley or cilantro on top. Serve immediately accompanied by fries or rice, beans, and a fresh salad. Enjoy!

That sounds delicious, Pete. A lot of my recipes I get off facebook or friends send them to me.

Skillet Apple Pie Biscuits

8 frozen buttermilk biscuits
1-21 oz. Can apple pie filling.
1 stick butter
1/2 cup light brown sugar.
1TBSP. ground cinnamon
1tsp. Vanilla extract
1/8 tsp. Ground nutmeg
Preheat oven 375. Melt butter and brush on all sides of 10 inch cast iron skillet. Set rest of butter aside
Mix brown sugar, cinnamon,  and nutmeg until well blended.
Dip each biscuit into melted butter.
Sprinkle all sides with cinnamon sugar mix. Arrange side by side in skillet.
Pour apple pie filling into a bowl and cut. Pour in 1 tsp. Vanilla extract and mix. Pour over biscuits. Pour remaining butter over and sprinkle with remaining cinnamon sugar mixture.
Bake 30 to 35 minutes.

Glaze:
1/2 cup powdered sugar
2 to 3 Tbsp. of cream or half and half
Or you can do 1 to 2 tsp. Milk.
Mix together.
Drizzle over warm biscuits.
Serve warm.

MeatLoaf

1 & 1/2 lbs. ground beef
2 eggs
3/4 cup milk
1 onion - chopped
1 cup Oatmeal Oats
1 tsp. sage
1 tbsp. thyme
1/4 tsp. ground black pepper
1/4 tsp. salt
3 tbsp. minced fresh parsley

Preheat oven to 350.
Mix eggs and milk.  Add onion, oats, seasonings, and parsley.
Add beef and mix well.

Shape into a loaf & place in 13x9 pan.
Bake for 50 min.
Remove from oven and drain grease.
Glaze loaf and back for another 10 -15 min.

Glaze:
3/4 cup ketchup
4 tbsp. brown sugar
1/4 tsp. dry mustard (or 1 tbsp. French's yellow mustard)

Here's  a trick I learned.
Want to make a cake taste like homemade.
Substitute milk for water and the milk makes it tase like it is made from scratch and makes it moister.

Broccoli Cauliflower Salad
1-2 heads of broccoli
1-2 heads of cauliflower
3 to 4 green scallions
3 yellow squash cut up
2 to 3 TBSP. of mayonnaise
1 to 2 Tbsp. Of sugar, I usually do about 1
1 to 3 TBsp. Of red balsamic vinegar
Bacon bits
Add all in a big bowl and mix together.

Veal or Beef Rouladen

8 pieces of veal or beef scaloppini
8 tsp. Dijon mustard
2 med. dill pickles (each quartered lengthwise)
2 strips bacon (each cut, widthwise, into 4 equal pieces)
1 small onion, diced
2 Tbsp. vegetable oil
2 cups beef stock mixed with 3 Tbsp. flour
1/3 cup red wine
1/2 tsp. dried thyme
Chopped parsley (garnish)

Oven 350.
Place a piece of veal on board and cover with plastic wrap. Flatten with meat mallet until 4" wide. Set aside.
Repeat with remaining veal.
For each piece:
1 tsp. mustard, 1 pickle slice, 1 bacon, 1 tsp. onion.
Roll & secure with toothpick and season with salt & pepper.
Place oil in skillet and brown on both sides.
Place in casserole dish (9x13) or roaster.
Drain oil from skillet and add stock/flour mixture, wine, and thyme. Bring to a simmer and pour over rouladen.
Cover & bake for 60-70 min (or until fork tender)
Garnish with parsley (optional)
